Almond Honey Glazed Roasted Chicken Breast

Chicken is an all time favorite at our dinner table at least two to three times a week. I find myself experimenting with different recipes for a change of flavor.

Recently, we decided to cut our salt intake down to half or less, which left me with the daunting task of seeking out various low sodium seasonings and rely more on herbs, but still give my dishes enjoyable flavor on the pallet. Not at all as easy as it sounds to prepare dishes with little or no salt. I recently purchased a 3 pound bag of whole unsalted almonds for between meal snacking and thought it would be great crushed over roasted chicken. This turned out to be a big hit at our house.

Ingredients
3-4 whole bone-in skinned - chicken breast
1/4 cup of olive oil
1 cup of whole fresh unsalted almonds (crushed)
1/2 cup of honey for glazing
2 tablespoons of garlic herbal mix (Mrs Dash is great with lots of varieties) They are salt-free all natural with no MSG.
2 teaspoons dried parsley flakes
1 tablespoon of low fat butter

Brush skinless chicken breast with olive oil and combine seasonings in a separate dish. Sprinkle over chicken breast. Coat chicken with crushed almonds and  put in a shallow roasting pan. Roast open pan at 350-375 degree. Coat the bottom of  roaster pan with a 1/2 cup of  water and remaining olive oil and low fat butter for basting. Drizzle over chicken with 1/2 of the honey. About 30 minutes after roasting, drizzle chicken breasts with the remaining honey basting frequently with pan juices for about 1 hour depending on size of breasts.

The chicken is juicy and very delicious! Enjoy!
