Skinless Krispy Shake & Fry Chicken
When fried chicken is what you are craving and saturday football lovers are demanding the fried stuff, skinless chicken coated with whole wheat flour mixture deep fried in virgin olive oil is a good compromise.
What you'll need:
1. About 8-10 cut chicken pieces (remove skin)
2. 1 cup of whole wheat flour plus 1 cup of white flour (mix together in a gallon size zip lock bag)
3. Your basic seasonings for taste (I use onion powder, seasoning salt, & black pepper) sprinkled lightly on chicken pieces.
4. 1-2 qts of extra virgin or pure olive oil depending on size of pan (I use a combination of both types of olive oil when deep frying.) I recommend using at least a 4" frying pan for the oil to completely cover the chicken while deep frying.
Now you can enjoy your favorite saturday/sunday football game complete with fried chicken & eat it too. ~

5. Shake your chicken pieces 3-4 pieces at a time in your flour mixture, shake off any excess and place in your pan. Make sure you fry on low high to medium heat and cook each piece at least 20-25 minutes depending on size.
Shake off any excess oil when removing from the fryer and place on paper towels to drain any remaing oil.
Now you can enjoy your favorite saturday/sunday football game complete with fried chicken & eat it too. ~
